This coffee is extremely DIFFERENT - in a GOOD WAY! This is a natural processed offering from Sulawesi, Indonesia. "Natural Process" means the coffee cherries are dried with the coffee beans still inside the fruit. After drying the fruit is milled away. The results are some wild flavors such as apricot, berry, stone fruit, vanilla and even banana.

HISTORY OF SULAWESI COFFEE
When the Dutch first introduced coffee to Indonesia, they produced the coffee on very large estates, which would later fall under government ownership after independence. One such estate, the Rantekarua Estate, sits in the heart of the Bittuang district, nestled within Tana Toraja Regency in South Sulawesi. Though it largely lay dormant for years, the government reignited its potential in 1987, granting cultivation rights to PT Sulotco Jaya Abadi. Since then, the 3000-acre estate has undergone a remarkable transformation—its once-neglected grounds now shine as a beacon of agricultural innovation, particularly in the realm of land conservation.
In fact, more than 500 acres of Rantekarua have been restored to their natural forest state, while the coffee cultivation here operates on organic principles. The estate's eco-friendly practices are bolstered by the manure from over 2000 sheep, grazing freely across the land, providing a rich and natural source of fertilizer. When harvest season arrives, cherries are handpicked and transported to Sulotco’s state-of-the-art processing facility in the Bolokan valley.
Here, the cherries undergo a rigorous selection process: soaked for 24 hours, then sorted to eliminate floaters—those less dense, damaged beans. The remaining cherries are spread across raised beds, where they dry slowly to a precise 11% moisture over a two-week period. Once dried, the cherries are stored, awaiting their final journey through the mill and export process—both of which take place right at the same facility. The final step? A meticulous hand-sorting, ensuring only the highest quality beans make it to market.
This fully integrated process—from estate to export—not only ensures unparalleled quality but also grants an impressive level of traceability, making Rantekarua a prime example of coffee cultivation done right.
