Roast Levels:

Medium - At this roast level the coffee will have firm acidity with an oatmeal like flavor with vanilla and spicy notes.

Dark Roast - This will be a Full City+ roast. At this roast level the coffee will have a lower acidity and a mild smoky quality. There are notes of cocoa and caramel.

French Roast - This is our darkest roast level. The coffee will be dark and shiny with a lower acidity. The taste will be smoky with dark chocolate qualities.

About CECANOR - Chiclayo Lambayeque Peru

This coffee is grown in the far Northwest of Peru - a mere 8 miles from the Pacific Ocean. Most of the farms growing this delicious coffee are women owned. This coffee is Strictly High Grown (SHG) at over 4,000 feet. NOTE: on the map in the images, we indicate that coffees in this region are grown at 2,500 to 7,000 feet elevation. This particular coffee is grown at elevation and shade grown. It is a very dense and complex coffee. It does hold up well to a darker roast, but we recommend the medium roast. The lighter roast highlights the complexities of the exquisite coffee.
