This high grown coffee is from the Chiapas region of Mexico. It is very close to Guatemala and is grown high in the mountains by Mayan farmers. This coffee is certified organic as well as Fairly Traded. We roast this tasty coffee to a medium roast (City+). This roast level retains the delicate acidity and floral aromas. The flavor profile can be described as nutty with a dark cocoa base. It is full bodied and finishes with a spicy note. This is an excellent Mexican coffee.
