About Bali Blue Moon Organic Coffee
Bali Blue Moon is a limited time organic coffee offering. This
coffee is known for the bluish tint of of
the green coffee beans. This is a natural result of the traditional wet-hulling
method known locally as Giling Basah. This technique is unique to
Indonesia and imparts a visual and sensory uniqueness that sets this coffee
apart from other gourmet organic coffees. It is reminiscent of a good Sumatran
coffee, but has it’s own distinct flavors.
The majority of Bali’s coffee originates from smallholder
farms nestled in the rich volcanic terrain of Mount Agung’s Kintamani
highlands. This area is home to multigenerational farming families who
cultivate coffee intercropped with citrus trees, drawing nourishment from
mineral-rich soils. Each farmer meticulously hand-sorts ripe cherries before
processing them in micro-mills. The cherries are pulped and fermented
overnight, then washed and sun-dried on patios.
What differentiates Bali Blue Moon is the departure from
conventional post-harvest practices. Instead of allowing the coffee to dry
fully within its parchment layer, the parchment is removed early—while the
beans retain a relatively high moisture level. The exposed beans are then laid
out to dry until they reach an export-grade moisture content. This process, Giling
Basah, produces beans with a striking bluish hue and a flavor profile
prized for its depth and character. Delicious!
Balinese coffee production is deeply interwoven with
cultural heritage. Farmers operate within traditional community structures
called Subak Abian, guided by Tri Hita Karana—a spiritual
philosophy emphasizing harmony between humans, nature, and the divine. These
principles are reflected in agricultural practices that forgo chemical
fertilizers and synthetic pesticides, ensuring ecological integrity across the
landscape.
